Preparation


The dough:

1. In a large bowl, sift flour, sugar and salt. Then add softened butter. Knead the mixture together with your hands. Be careful not to knead the dough too much or you will make the dough tough.

2. Beat the egg yolks and add 2 tablespoons of this to the mixture for the dough. Bring together until smooth. Cover the mixture and then refrigerate for 30 minutes.


The filling:

3. Melt the sugar and salt with the hot water. Mix until dissolved and let cool.

4. Add the rest of the beaten egg yolk. Stir in the water mixture and also the evaporated milk if you want to add vanilla, add it now. Stir and mix well.r.

5. Strain the filling to filter out any lumps. Put in the fridge.


The finishing touch:

Preheat the oven to 200˚C.

7. Remove the dough from the refrigerator and divide it into 16 equal portions. Rub baking molds with a thin layer of oil. Knead a ball of your dough into a ball and put it in the baking tin. Press the dough into the baking molds, edge up so that you have a 'hole' for the pudding.

8. Pour the pudding filling into the wells until it is about 80 full. Bake for 15 to 20 minutes until the surface turns golden brown and a toothpick can sit in the filling.
